I love making granola. The past few months I have stopped buying granola and now I only ever eat my own homemade granola. I love that it’s so easy to customize and play around with a granola recipe. After trying several different ones, I think it’s safe to say this is my favorite!
Honey and Maple Granola
Yield: this makes 21 servings (1/3 cup each) which would be around 7 cups. Yay math!
Time: 10 minutes prep, 30 minutes bake time
Ingredients:
- 3 cups rolled, old-fashioned oats
- 1/4 cup sunflower seeds
- 3 Tbsp ground flaxseed
- 1/4 cup peanuts (I use dry roasted and either lightly salted or unsalted)
- 1/4 cup slivered almonds (or you could do sliced)
- 1/4 cup maple syrup
- 1/4 cup honey
- 1/2 cup coconut oil (melted) or canola oil (I prefer coconut, but sometimes it’s hard to find)
- 1 tsp vanilla
- heaping 1/2 tsp cinnamon
- 1/4 cup dried cranberries or raisins (or more if you like…I try to keep the calories in check so this is what I do)
Note on ingredients: everything’s flexible. You can use different nuts if you like. Also, you can use all honey or all maple syrup. I like to do equal parts of each because of how expensive maple syrup is.
Directions:
1) Preheat the oven to 350.
2) Mix together the oats, seeds, flax seed, and nuts in a large bowl.
3) Mix together the maple syrup, honey, and oil. I like to do this right into the measuring cup. I’ll add the oil, then on top of that add 1/4 cup worth of honey and then add the maple syrup. This saves a dish!
4) Add the vanilla and cinnamon to the liquid ingredients.
5) Pour the liquid into your big bowl of dry ingredients. Stir VERY WELL! If you think you’re done, keep stirring a bit to make sure everything is covered!
6) Pour onto a cookie sheet. I like to use my SilPat here but it’s not necessary. Bake at 350 for 30 minutes, stirring at least once during cooking. I like to stir it twice, so I set a timer for 10 minutes, stir, then 10 more minutes, then stir, then the final 10 minutes!
7) After the granola has cooled a bit, sprinkle the dried cranberries or raisins all over it. Then put it in to jars or containers!
